- 1 tbsp olive oil
- 500g halloumi, thinly sliced
- 800g Heat N Serve Red Quinoa
- Red onion, thinly sliced
- 1 bunch radishes, thinly sliced
- 100g baby rocket
- 1/2 cup mint leaves
- 1/2 cup flat-leaf parsley leaves
- 1/3 cup (40g) walnuts, toasted, coarsely chopped
- Tablespoons olive oil
- 1 tablespoon red wine vinegar
- 1 garlic clove, crushed
Warm a frying pan with olive oil. Cook halloumi over medium heat for 1-2 mins each side or until golden.
Meanwhile, heat the Heat N Serve Red Quinoa in microwave for approx. 2 minutes until warm.
Combine the halloumi, Heat N Serve Red Quinoa mixture, onion, radish, rocket, mint, parsley and walnuts in a large bowl. Add oil, vinegar and garlic and gently toss to combine.
Season to taste.
