Featured product: Stocks Matter Heat N Serve Chickpeas
800g small sweet potatoes, scrubbed
400g Heat N Serve Chickpeas, rinsed
2 tablespoons olive oil
2 tsp curry powder
1 teaspoon ground cumin
1 red onion, cut into wedges
1 cup of cherry tomatoes
1/2 cup frozen peas, defrosted
1/3 cup coriander, chopped
2 tablespoons extra virgin olive oil
1 tablespoon hulled tahini
1 lime, rind finely grated, juiced
1-2 teaspoons water
1/2 teaspoon turmeric ground
Pinch of caster sugar
Preheat oven 200C.
Halve sweet potatoes and place on a baking tray. Add Heat N Serve Chickpeas, onions, oil, curry powder, cumin and seasoning, mix well. Lay onto a baking tray and roast for 25 minutes or until vegetables are tender.
Place all the ingredients for dressing in a jar. Seal and shake.
Add peas and tomatoes to sweet potato. Drizzle with dressing and sprinkle with coriander. This side dish is great with your favourite roasted meats or steak and served with Stocks Matter Red Wine Jus.
